Try a healthier alternative to take-out sushi rolls (which are often filled with not-so-natural ingredients) Replace the white rice with quinoa and fill them with whatever you like!Ingredients1 tablespoon rice wine vinegar 1 teaspoon coconut/palm sugar ½ teaspoon sea salt 2 cups cooked quinoa (or ½ cup per roll)1 pkg toasted nori sheets 1 ripe avocado, cut lengthwise1 cucumber, cut into strips1 carrot, cut into stripsTamari saucePreparation1. Prepare all ingredients on a cutting board, place nori sheets on a clean, dry surface, fill a small cup with warm water.2. Combine vinegar, sugar, and salt in a bowl and stir to dissolve sugar. Pour this mixture over the cooked quinoa and mix well. 3.Take ½ cup of quinoa and spread evenly on a sheet of nori. 1 inch from edge, apply warm water to edge and finish rolling to seal. 4.Slice the buns with a very sharp knife. Serve with tamari sauce for dipping!We used avocado, cucumber and carrot to fill the quinoa sushi, you can recreate it with other delicious ingredients like mushrooms, eggplant and sweet potatoes!
